Sweet Pistachio Butter

Ingredients

The nuts

  • 1 cup pistachios, shelled, blanched and skinned
  • 1 cup almonds, blanched and skinned

The sweetener and seasoning

  • ¾ cup granulated sugar
  • ½ cup hot water
  • a couple pinches salt

Instructions

  1. Blanch the almonds and pistachios by boiling them in water for about a minute.
  2. Remove the skins from the almonds and pistachios.
  3. In a medium bowl, combine the nuts with about ½ cup of hot water.
  4. Use a hand blender to puree the mixture until smooth, adding more water as needed to reach the desired consistency.
  5. Stir in the granulated sugar, starting with ¼ cup and adjusting to taste.
  6. Add a couple pinches of salt to enhance the flavor.
