Simple Vegan Fish Sauce Substitute

Instructions
- In a medium saucepan, combine water, seaweed, dried shiitake mushrooms, and sea salt.
- Bring the mixture to a boil, then cover and reduce heat to low, simmering for 20 minutes without the lid.
- Remove from heat and strain the mixture into a bowl, pressing the mushrooms and seaweed to extract liquid.
- Add miso and coconut aminos to the strained liquid, then taste and adjust as needed.
