Ingredients

  • 1 ¼ cup water
  • ¼ cup dulse (loosely packed)
  • ¼ cup dried shiitake mushrooms
  • 2 tsp sea salt
  • 1 ¼ tsp chickpea miso (or soy miso)
  • 1-2 Tbsp tamari (or coconut aminos)

Instructions

  1. 1. In a small saucepan, combine water, dulse, dried shiitake mushrooms, and sea salt.
  2. 2. Bring the mixture to a boil, then cover, reduce heat, and simmer for 15-20 minutes.
  3. 3. Remove from heat and let it cool slightly.
  4. 4. Strain the liquid through a fine mesh strainer into a bowl, pressing the mushrooms and dulse to extract all the liquid.
  5. 5. Add chickpea miso and tamari to the strained liquid, adjusting seasoning as needed.
  6. 6. Store in a sealed container in the refrigerator for up to 1 month or freeze in an ice cube tray for up to 2 months.
