Healthier Walnut Magic Bars

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Toast the coconut for 10 minutes until golden brown.
- In a saucepan, boil the thick part of the coconut milk with coconut sugar and salt, then reduce heat and simmer for 10-12 minutes until thickened.
- Remove from heat, add vanilla, and let cool for at least 30 minutes.
- In a food processor, blend dates, oats, walnuts, and salt until sticky; add water if needed.
- Press the mixture into the bottom of a bread loaf pan.
- Pour the caramel layer over the base and spread evenly.
- Add layers of walnuts, chocolate chips, toasted coconut, and sea salt, pressing down slightly.
- Bake in the oven for 5 minutes until the chocolate chips melt.
- Freeze for at least 1 hour before cutting into bars.
