Ingredients

Base

  • 2 cups medjool dates
  • 1 cup oats
  • 2 cups walnuts
  • ½ tsp salt

Caramel layer

  • 1 can full fat coconut milk
  • 1 cup coconut sugar
  • ½ tsp salt
  • 1 tsp vanilla

Toppings

  • 1 cup chopped walnuts
  • 1 cup chocolate chips
  • 1 cup coconut, toasted
  • to taste flaky sea salt

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Toast the coconut for 10 minutes until golden brown.
  3. In a saucepan, boil the thick part of the coconut milk with coconut sugar and salt, then reduce heat and simmer for 10-12 minutes until thickened.
  4. Remove from heat, add vanilla, and let cool for at least 30 minutes.
  5. In a food processor, blend dates, oats, walnuts, and salt until sticky; add water if needed.
  6. Press the mixture into the bottom of a bread loaf pan.
  7. Pour the caramel layer over the base and spread evenly.
  8. Add layers of walnuts, chocolate chips, toasted coconut, and sea salt, pressing down slightly.
  9. Bake in the oven for 5 minutes until the chocolate chips melt.
  10. Freeze for at least 1 hour before cutting into bars.
