Instructions
- Prepare the crust by pulsing cold butter with dry ingredients until crumbly.
- Dissolve espresso powder in half-and-half and add to the mixture, pulsing until dough holds together.
- Shape the dough into a disk, wrap in plastic, and chill.
- Roll out the dough and transfer it to a pie pan, then chill again.
- Beat together butter, sugar, and salt for the filling.
- Add eggs one at a time, then stir in cocoa, whiskey, half-and-half, and vanilla.
- Grind espresso powder, cornmeal, and chocolate, then fold into the batter.
- Pour the batter into the crust and bake until set.
- Cool at room temperature, then refrigerate overnight before serving.
