Molten Brownie Pie

Ingredients

The crust

  • 1 ½ cups all-purpose flour
  • ¼ tsp salt
  • ½ cup cold butter or shortening
  • ½ cup ice cold water
  • 1 egg for the crust (before final bake)
  • to taste tsp granulated sugar

The filling

  • 4 eggs large eggs
  • 1 ⅓ cups granulated sugar
  • 1 tbsp vanilla extract
  • ½ cup cocoa powder
  • ½ tsp salt
  • 10 tbsp unsalted butter, melted
  • cup semi-sweet or dark chocolate chips

Instructions

  1. Prepare the pie crust by trimming the edges of the dough and shaping the edges using your fingers.
  2. Prick the pie crust with a fork and freeze it for 10-15 minutes.
  3. Preheat the oven to 375°F and prepare a baking tray.
  4. Line the pie shell with parchment paper and fill with pie weights, then bake for 20-25 minutes.
  5. Remove the weights and bake for another 10 minutes until golden, then let cool slightly.
  6. Reduce the oven temperature to 350°F.
  7. In a pot, melt the butter and set aside.
  8. In a bowl, whisk together eggs and sugar, then add cocoa powder, vanilla, and salt until smooth.
  9. Slowly mix in the melted butter and fold in chocolate chips, then pour into the pie shell.
  10. Brush the crust edges with whisked egg and sprinkle with sugar.
  11. Bake for 40 minutes until the filling is puffed and slightly jiggly.
  12. Let the pie cool for 25-30 minutes before serving with whipped cream.
