Simple Pecan Pie

Ingredients

Crust

  • cups all purpose flour
  • ½ tsp salt
  • 2 tsp white sugar
  • 6 tbsp cold butter, cubed
  • 4–6 tbsp ice cold water

Filling

  • 3 cups chopped pecans
  • 3 large eggs
  • 4 tbsp melted butter
  • 1 cup brown sugar
  • ¾ cup dark corn syrup
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 tbsp bourbon

Instructions

  1. In a food processor, combine flour, salt, and sugar, then pulse.
  2. Add cubed butter and process until crumbly, then add remaining flour and pulse until fine crumbles.
  3. Transfer dough to a bowl, sprinkle with ice water, and mix until it holds together. Chill for at least 2 hours.
  4. Roll out the dough on a floured surface to fit the pie dish, then transfer it to the greased dish.
  5. Add pecans to the bottom of the unbaked pie crust.
  6. In a bowl, whisk together eggs, melted butter, brown sugar, corn syrup, vanilla, salt, cinnamon, and bourbon until well combined.
  7. Pour the filling over the pecans in the pie crust.
  8. Bake at 425°F for 10 minutes, then reduce to 350°F and bake for 30-40 minutes.
  9. Allow the pie to cool for several hours before slicing.
