Instructions
- Prepare the pie crust by combining flour, sugar, and salt in a food processor and pulsing until mixed.
- Add shortening and butter, processing until the mixture resembles coarse crumbs.
- Add ice water gradually until the dough comes together, then shape it into a disk and refrigerate for 1 hour.
- Preheat the oven to 375 degrees and roll out the dough into a 12-inch circle, fitting it into a pie plate.
- Blind bake the crust with weights for 25 to 30 minutes until lightly browned, then let it cool.
- For the filling, melt butter in a saucepan, then whisk in sugar, salt, eggs, honey, and vanilla until smooth.
- Heat the mixture until shiny and it reaches 130 degrees, then stir in 1 cup of chopped pecans.
- Pour the filling into the warm pie crust, sprinkle with remaining pecans, and arrange pecan halves on top.
- Bake at 275 degrees for 50 to 60 minutes until set, then cool on a wire rack for 2 hours.
