Instructions
- Preheat the oven to 375°F (191°C) and prepare a baking sheet.
- Cream together the butter and sugars until light and creamy, then add the egg, vanilla, and molasses.
- In another bowl, whisk together the flour, baking soda, salt, cinnamon, cloves, and oats.
- Gradually mix the dry ingredients into the wet mixture until combined.
- Drop dough onto the baking sheet, spacing them apart, and bake for 10 minutes until golden.
- Allow cookies to cool on the sheets for 5 minutes before transferring to a wire rack.
- For the filling, beat the butter until creamy, then add confectioners’ sugar and mix well.
- Add heavy cream and vanilla, then beat until fluffy, adjusting with salt if necessary.
- Spread the filling on half of the cookies and sandwich with the other half.
