Ingredients

The cookie

  • ½ cup all-purpose flour
  • 1 Tbsp all-purpose flour
  • ½ cup quick oats
  • ¼ teaspoon baking soda
  • teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ¼ cup unsalted butter
  • ½ cup light or dark brown sugar
  • 1 large egg
  • ½ teaspoon pure vanilla extract

The creme filling

  • 3 Tbsp unsalted butter
  • cup confectioners’ sugar
  • 1 Tbsp heavy cream
  • ¼ teaspoon pure vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a baking sheet.
  2. In a bowl, whisk together the flour, quick oats, baking soda, and cinnamon.
  3. Beat the butter until creamy, then mix in the brown sugar, egg, and vanilla extract.
  4. Combine the wet and dry ingredients to form a sticky dough.
  5. Divide the dough into two balls and place them on the baking sheet, leaving space for spreading.
  6. Bake for 20-22 minutes until lightly browned on the edges, then cool on a wire rack.
  7. For the filling, beat the butter until creamy, then gradually add the confectioners’ sugar and mix well.
  8. Add the cream, vanilla, and salt, mixing until smooth.
  9. Frost the underside of one cookie and sandwich with the other.
