Ingredients

Cookies

  • ½ cup butter, softened
  • cup coconut sugar
  • 1 large egg
  • 2 tbsp molasses
  • 1 tsp vanilla extract
  • 1⅓ cup all purpose flour
  • cup quick oats
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt

Filling

  • ½ cup butter, softened
  • 1 cup marshmallow fluff
  • cup powdered sugar

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, beat together the butter and coconut sugar until combined, then add the egg and mix until creamy.
  3. Mix in the molasses and vanilla extract.
  4. In a separate bowl, combine the flour, oats, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Roll about 2 tbsp of dough into balls and flatten slightly before baking.
  7. Bake for 9-10 minutes and let cool completely before filling.
  8. While the cookies cool, blend together the butter and marshmallow fluff, then gradually add the powdered sugar until creamy.
  9. Spread 1-2 tbsp of filling on half of the cookies and top with the other half to make sandwiches.
