Instructions
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- In a large bowl, beat together the butter and coconut sugar until combined, then add the egg and mix until creamy.
- Mix in the molasses and vanilla extract.
- In a separate bowl, combine the flour, oats, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until well combined.
- Roll about 2 tbsp of dough into balls and flatten slightly before baking.
- Bake for 9-10 minutes and let cool completely before filling.
- While the cookies cool, blend together the butter and marshmallow fluff, then gradually add the powdered sugar until creamy.
- Spread 1-2 tbsp of filling on half of the cookies and top with the other half to make sandwiches.
