Homemade Oatmeal Cream Pies

Instructions
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- In a mixer, combine the butter, brown sugar, egg, vanilla, baking soda, cinnamon (if using), and salt until light and fluffy.
- Add the flour and oats, mixing until no dry streaks remain.
- Scoop the dough into balls and place them on the baking sheets, spacing them apart.
- Bake for 8-10 minutes until set around the edges but still soft in the center.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
- For the filling, whip together the butter, powdered sugar, marshmallow fluff, and vanilla until thick and creamy.
- Add heavy cream as needed to achieve a spreadable consistency.
- Spread filling on the bottom of half of the cookies and top with the other half.
