Instructions
- Preheat the oven to 375°F and prepare baking sheets with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, mix the brown sugar, buttermilk, vegetable oil, egg, and vanilla until well combined.
- Combine the wet and dry mixtures, then add hot water and mix until just combined.
- Scoop the batter onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 8 to 10 minutes, until the cookies spring back when touched.
- Cool the cookies on a wire rack.
- For the filling, cream the salted butter, unsalted butter, and powdered sugar until combined, then whip until fluffy.
- Fold in the marshmallow fluff and chill for 20 minutes.
- Pipe the filling onto half of the cookies and sandwich with the remaining cookies.
