Instructions
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat the butter until creamy, then add brown sugar and beat until fluffy.
- Add the egg and vanilla, mixing until combined.
- Gradually add the dry ingredients and buttermilk, alternating until fully combined.
- Scoop mounds of batter onto the baking sheets, spacing them apart.
- Bake for 10-12 minutes until tops spring back when touched, then cool completely.
- For the frosting, melt butter, then add brown sugar and cream, whisking until dissolved.
- Allow the mixture to bubble, then cool before mixing in confectioners’ sugar and adjusting consistency with more cream if needed.
- Sandwich the frosting between two whoopie pie cookies and store in the refrigerator.
