Ingredients

The whoopie pies

  • 2 cups all-purpose flour
  • 6 Tablespoons unsweetened natural cocoa powder
  • 1 and 1/4 teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1 cup buttermilk

The salted caramel frosting

  • ½ cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 5 – 6 Tablespoons heavy cream
  • ¼ teaspoon salt
  • 2 and 1/2 cups confectioners’ sugar, sifted

Instructions

  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the butter until creamy, then add brown sugar and beat until fluffy.
  4. Add the egg and vanilla, mixing until combined.
  5. Gradually add the dry ingredients and buttermilk, alternating until fully combined.
  6. Scoop mounds of batter onto the baking sheets, spacing them apart.
  7. Bake for 10-12 minutes until tops spring back when touched, then cool completely.
  8. For the frosting, melt butter, then add brown sugar and cream, whisking until dissolved.
  9. Allow the mixture to bubble, then cool before mixing in confectioners’ sugar and adjusting consistency with more cream if needed.
  10. Sandwich the frosting between two whoopie pie cookies and store in the refrigerator.
