Ingredients

The Cakes

  • cup almond flour
  • cup unsweetened cocoa powder
  • ½ cup coconut sugar
  • 2 tablespoons coconut sugar
  • ½ teaspoon salt
  • ¾ teaspoon baking soda
  • 2 tablespoons coconut oil (melted and cooled)
  • 2 medium eggs
  • 2 teaspoons vanilla extract
  • ½ cup maple syrup

The Filling

  • 1 container vanilla frosting

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: almond flour, cocoa powder, coconut sugar, salt, and baking soda.
  3. Mix in the wet ingredients one by one until the dough is smooth.
  4. Use a cookie scoop to form 16-18 small cakes (yielding 8-10 whoopie pies).
  5. Bake for 11-12 minutes.
  6. Let the cakes cool completely before spreading frosting on them.
  7. Form the cakes into sandwiches with the frosting, sprinkle with sea salt if desired, and enjoy.
