Ingredients

The cakes

  • cup almond flour
  • cup unsweetened cocoa powder
  • ½ cup coconut sugar
  • 2 tablespoons coconut sugar
  • ½ teaspoon salt
  • ¾ teaspoon baking soda
  • 2 tablespoons coconut oil
  • 2 medium eggs
  • 2 teaspoons vanilla extract
  • ½ cup maple syrup
  • ½ teaspoon peppermint extract
  • ¾ cup candy canes, crushed

The filling

  • 1 container vanilla frosting

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: almond flour, cocoa powder, coconut sugar, salt, and baking soda.
  3. Mix in the wet ingredients one by one until the dough is smooth.
  4. Use a cookie scoop to form 16-18 small cakes.
  5. Bake for 11-12 minutes and let them cool completely.
  6. Spread frosting on the cooled cakes to form sandwiches.
  7. Crush the candy canes and roll the whoopie pies in the crushed candy canes.
  8. Serve and enjoy!
