Ingredients

The cookies

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsulphured or dark molasses
  • ¼ cup hot water
  • cup granulated sugar
  • ½ cup vegetable oil
  • 1 large egg

The filling

  • 6 ounces full-fat brick cream cheese
  • ¼ cup unsalted butter
  • 1 ½ cups confectioners’ sugar
  • ½ teaspoon pure vanilla extract
  • small pinch ground ginger
  • small pinch ground cinnamon
  • small pinch ground nutmeg
  • small pinch ground cloves

Instructions

  1. Whisk together the dry ingredients for the cookies.
  2. Mix the wet ingredients and combine with the dry mixture to form the dough.
  3. Chill the dough in the refrigerator for at least 2 hours.
  4. Preheat the oven and prepare baking sheets.
  5. Scoop mounds of dough onto the baking sheets.
  6. Bake the cookies until the edges are set and cool them.
  7. Prepare the cream cheese filling by mixing all filling ingredients until smooth.
  8. Assemble the whoopie pies by spreading the filling between two cookies.
