Ingredients

The cookies

  • 2 cups apple cider
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • ¼ cup packed light or dark brown sugar
  • 2 tablespoons vegetable oil
  • ¾ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • optional cinnamon sugar for topping

The spiced buttercream filling

  • ¾ cup unsalted butter
  • 4 cups confectioners’ sugar
  • ½ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • teaspoon ground ginger
  • 3 tablespoons apple cider
  • 1 teaspoon pure vanilla extract
  • pinch salt

Instructions

  1. Reduce the apple cider until you have ½ cup.
  2. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  3. Whisk together the dry ingredients in a bowl.
  4. Cream the butter and sugars together, then add the wet ingredients.
  5. Combine the wet and dry ingredients, then mix in the reduced apple cider.
  6. Scoop mounds of batter onto the baking sheets and sprinkle with cinnamon sugar if desired.
  7. Bake for 12-14 minutes until lightly browned.
  8. Prepare the spiced buttercream filling while the cookies cool.
  9. Assemble the whoopie pies by spreading filling between two cookies.
