Instructions
- Reduce the apple cider until you have ½ cup.
- Preheat the oven to 350°F (177°C) and prepare baking sheets.
- Whisk together the dry ingredients in a bowl.
- Cream the butter and sugars together, then add the wet ingredients.
- Combine the wet and dry ingredients, then mix in the reduced apple cider.
- Scoop mounds of batter onto the baking sheets and sprinkle with cinnamon sugar if desired.
- Bake for 12-14 minutes until lightly browned.
- Prepare the spiced buttercream filling while the cookies cool.
- Assemble the whoopie pies by spreading filling between two cookies.
