Thai Peanut Chicken Skewers

bamboo skewers, soaked in water
The Thai Peanut Sauce

coconut milk

peanut butter

Thai fish sauce

Sriracha hot sauce

fresh mint leaves

fresh lime juice

rice vinegar
Instructions
- Prepare the Thai peanut sauce by combining all sauce ingredients in a saucepan and simmering for 10 minutes.
- Once cooled, marinate the chicken pieces in 1 cup of the sauce for 20 minutes.
- Quarter the Vidalia onions and slice the zucchini.
- Skewer the chicken, Vidalia onion, and zucchini, alternating the ingredients.
- Preheat the grill to 350°F (medium heat).
- Grill the skewers for about 7 minutes or until the chicken reaches an internal temperature of 170°F.
- Serve the skewers with rice and additional Thai Peanut sauce for dipping.
