Thai Peanut Chicken Skewers

Ingredients

The skewers

  • 1 lb chicken cutlets or boneless chicken breasts, cut into 1½” pieces
  • 2 large Vidalia onions
  • 2 large zucchini squash, sliced into ½” pieces
  • 12 pieces bamboo skewers, soaked in water

The Thai Peanut Sauce

  • cups coconut milk
  • 1 cup peanut butter
  • 2 tablespoons Thai fish sauce
  • 3 cloves garlic, minced
  • 2 tablespoons Sriracha hot sauce
  • 4 tablespoons fresh mint leaves
  • 4 tablespoons fresh lime juice
  • 2 pieces limes, zested
  • 4 tablespoons rice vinegar

Instructions

  1. Prepare the Thai peanut sauce by combining all sauce ingredients in a saucepan and simmering for 10 minutes.
  2. Once cooled, marinate the chicken pieces in 1 cup of the sauce for 20 minutes.
  3. Quarter the Vidalia onions and slice the zucchini.
  4. Skewer the chicken, Vidalia onion, and zucchini, alternating the ingredients.
  5. Preheat the grill to 350°F (medium heat).
  6. Grill the skewers for about 7 minutes or until the chicken reaches an internal temperature of 170°F.
  7. Serve the skewers with rice and additional Thai Peanut sauce for dipping.
