Grilled Sesame Lime Chicken with Spicy Thai Peanut Sauce

Spicy Peanut Sauce

creamy peanut butter

low sodium soy sauce (or tamari for gluten free)

rice vinegar

grated ginger (or ½ teaspoon of ground ginger)

Instructions
- Mix sesame oil, lime juice, salt, and pepper in a large bowl.
- Add cubed chicken to the marinade and toss to coat.
- Cover and marinate in the refrigerator for 20 minutes.
- In a small bowl, mix peanut butter, soy sauce, rice vinegar, grated ginger, minced garlic, red pepper flakes, water, and fresh lime juice until smooth and set aside.
- Place marinated chicken cubes on skewers.
- Preheat the grill to medium-high heat (about 400 degrees).
- Grill the chicken skewers for 3-4 minutes on each side.
- Serve the grilled chicken with the spicy peanut sauce.
