Thai Chicken Skewers with Peanut Sauce

Ingredients

Chicken & Marinade Ingredients

  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 unit juice from one lime
  • 2 cloves garlic, minced
  • 1 teaspoon Sriracha
  • teaspoon red pepper flakes
  • 2 tablespoons chopped cilantro
  • 1 ½ pounds raw boneless, skinless chicken breasts, cut into bite-sized chunks
  • 4 unit 9” skewers (soaked if wooden)

Peanut Sauce Ingredients

  • 2 tablespoons PB2 powdered peanut butter
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon water
  • teaspoon garlic powder
  • ¼ teaspoon black pepper
  • teaspoon Sriracha
  • 1 teaspoon brown sugar
  • teaspoon sesame oil

Instructions

  1. Combine marinade ingredients in a bowl and mix thoroughly.
  2. Pour marinade into a Ziploc bag and add chicken, seal and shake to coat.
  3. Refrigerate the chicken in the marinade for at least 3-4 hours.
  4. Preheat the grill until hot and divide chicken evenly onto skewers.
  5. Grill skewers over low heat for about 10 minutes, flipping halfway through, until cooked through.
  6. Whisk together all peanut sauce ingredients in a bowl until combined.
  7. Serve each skewer with about a tablespoon of peanut sauce for dipping.
