Instructions
- Heat coconut oil in a large skillet over medium-high heat.
- Add pineapple, grated carrots, and sweet peas, cooking for 2 minutes.
- Stir in cooked rice, lime juice, fish sauce, maple syrup, and ginger, cooking for an additional 5 minutes while stirring often.
- Remove from heat and mix in chopped cilantro and sliced scallions.
- Top the dish with chopped cashews and toasted coconut before serving.
- Drizzle with hot sauce if desired.
