Asian Rice Pilaf

Ingredients

The pilaf

  • 2 ½ cups cooked white rice
  • 1 tablespoon coconut oil
  • 1 cup chopped pineapple
  • 2 medium carrots, grated
  • ½ cup baby sweet peas
  • 3 tablespoons lime juice
  • 1 teaspoon fish sauce
  • 2 teaspoons maple syrup
  • 1 tablespoon fresh minced ginger
  • ½ teaspoon crushed red pepper
  • ½ cup chopped cilantro
  • 3 medium scallions, sliced
  • 2 tablespoons chopped cashews
  • ½ cup shredded unsweetened coconut, toasted

Optional

  • to taste hot sauce

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat.
  2. Add pineapple, grated carrots, and sweet peas, cooking for 2 minutes.
  3. Stir in cooked rice, lime juice, fish sauce, maple syrup, and ginger, cooking for an additional 5 minutes while stirring often.
  4. Remove from heat and mix in chopped cilantro and sliced scallions.
  5. Top the dish with chopped cashews and toasted coconut before serving.
  6. Drizzle with hot sauce if desired.
