Cashew Rice Pilaf

Instructions
- Melt butter in a medium pot and add minced garlic, turmeric, cumin, and cinnamon, cooking for about 2 minutes.
- Add uncooked jasmine rice and cook for an additional 2 minutes, stirring frequently.
- Stir in chopped cashews, dried fruit, water, salt, and bay leaf, then combine the ingredients.
- Cover the pot, bring to a boil, then reduce heat to low and simmer for 20 minutes.
- Turn off the heat and let the pot sit, covered, for another 15 minutes.
- Fluff the rice with a fork and stir in chopped cilantro before serving.
