Cashew Rice Pilaf

Ingredients

  • 2 Tbsp butter
  • 1 clove garlic, minced
  • ½ tsp turmeric
  • ½ tsp cumin
  • ¼ tsp cinnamon
  • 2 cups uncooked jasmine rice
  • ½ cup chopped cashews
  • ¼ cup dried fruit (raisins, cranberries, or chopped apricots)
  • 3 cups water
  • ¾ tsp salt
  • 1 whole bay leaf
  • ¼ bunch cilantro (optional)

Instructions

  1. Melt butter in a medium pot and add minced garlic, turmeric, cumin, and cinnamon, cooking for about 2 minutes.
  2. Add uncooked jasmine rice and cook for an additional 2 minutes, stirring frequently.
  3. Stir in chopped cashews, dried fruit, water, salt, and bay leaf, then combine the ingredients.
  4. Cover the pot, bring to a boil, then reduce heat to low and simmer for 20 minutes.
  5. Turn off the heat and let the pot sit, covered, for another 15 minutes.
  6. Fluff the rice with a fork and stir in chopped cilantro before serving.
