Wild Rice Pilaf

Ingredients

The rice

  • ½ cup wild rice blend
  • 1 cup vegetable broth

The aromatics

  • 2 Tbsp butter
  • 1 each yellow onion
  • 3 ribs celery
  • 1 each apple

The seasonings

  • ½ tsp dried sage
  • ½ tsp dried thyme
  • ¼ tsp salt
  • ¼ tsp freshly cracked black pepper

The additions

  • ¼ cup chopped walnuts
  • ¼ cup dried cranberries
  • 1 Tbsp chopped parsley

Instructions

  1. Combine the wild rice blend and vegetable broth in a saucepot, cover, and bring to a boil.
  2. Once boiling, reduce heat and simmer for 45 minutes or according to package instructions.
  3. While the rice cooks, dice the onion, celery, and apple.
  4. Sauté the onion in butter over medium heat until softened.
  5. Add the diced apple, celery, sage, thyme, salt, and pepper to the skillet and sauté until softened.
  6. Once the rice is cooked, add it to the skillet along with walnuts, cranberries, and parsley.
  7. Stir to combine, taste, and adjust seasonings as needed before serving hot.
