Rice Pilaf with Cranberries and Pecans

Ingredients

  • 1 cup wild rice blend
  • 2 cups chicken broth
  • 4 tablespoons butter
  • ½ cup onion, finely diced
  • 2 Granny Smith apples finely diced
  • ½ cup dried cranberries
  • ½ cup pecans, chopped
  • 1 teaspoon fresh rosemary leaves, minced
  • 2 tablespoons fresh parsley leaves, chopped
  • to taste salt
  • to taste black pepper

Instructions

  1. Combine the wild rice blend and chicken broth in a pot and cook according to package directions.
  2. While the rice is cooking, melt the butter in a large skillet over medium heat.
  3. Add the onion to the skillet and cook until softened.
  4. Add the apples and continue cooking until they are softened.
  5. Pour the cooked rice into the skillet with the onions and apples, stirring to combine.
  6. Add the dried cranberries, pecans, rosemary, and parsley, mixing everything together.
  7. Season with salt and pepper to taste, then serve.
