Wild Rice Pilaf with Cranberries and Apple

Ingredients

The pilaf

  • 2 tablespoons extra virgin olive oil
  • 1 chopped onion
  • 1 tablespoon minced garlic
  • 2 cups uncooked wild rice
  • 4 ½ cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground pepper

The mix-ins

  • 1 diced apple
  • 1 tablespoon lemon juice
  • 1 cup dried cranberries
  • ½ cup chopped pecans
  • 2 tablespoons parsley

Instructions

  1. Heat olive oil in a large pot over medium heat and cook the onion until tender.
  2. Add garlic and cook for an additional minute.
  3. Increase heat to medium-high and add wild rice, cooking for 2 minutes while stirring often.
  4. Add vegetable broth, thyme, sea salt, and pepper, then bring to a boil.
  5. Cover and reduce heat to low, simmering for about 35 minutes until the rice is tender.
  6. Remove from heat and let stand covered for 10 minutes.
  7. In a small bowl, toss diced apple with lemon juice.
  8. Add the apple, dried cranberries, and pecans to the rice and toss to combine.
  9. Garnish with parsley and serve warm.
