Wild Rice Pilaf with Cranberries and Apple

Instructions
- Heat olive oil in a large pot over medium heat and cook the onion until tender.
- Add garlic and cook for an additional minute.
- Increase heat to medium-high and add wild rice, cooking for 2 minutes while stirring often.
- Add vegetable broth, thyme, sea salt, and pepper, then bring to a boil.
- Cover and reduce heat to low, simmering for about 35 minutes until the rice is tender.
- Remove from heat and let stand covered for 10 minutes.
- In a small bowl, toss diced apple with lemon juice.
- Add the apple, dried cranberries, and pecans to the rice and toss to combine.
- Garnish with parsley and serve warm.
