Wild Rice Pilaf

Ingredients

  • 1 tablespoon olive oil
  • ¾ cup chopped onion
  • ¾ cup diced celery
  • ¾ cup diced carrots
  • 2 cloves garlic
  • ¾ cup uncooked long-grain brown rice
  • ¾ cup uncooked wild rice blend
  • cups chicken broth or vegetable broth
  • 1 tablespoon fresh parsley

Instructions

  1. Heat olive oil in a large sauté pan over medium-high heat.
  2. Add chopped onion, celery, and carrots; cook until the onion is translucent.
  3. Stir in minced garlic and cook for an additional 30-60 seconds.
  4. Add the brown rice and wild rice blend; toast for about a minute.
  5. Pour in the broth, stir, and bring to a boil.
  6. Cover the pan, reduce heat to low, and simmer for 45 minutes until the rice is tender.
  7. Fluff the rice with a fork and garnish with chopped parsley before serving.
