Ingredients

Low Carb Thyme Crust

  • 2 cups almond flour
  • 2 large eggs
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon dried thyme

Quiche Filling

  • 4 ounces onion
  • 4 ounces fennel bulb or more onion
  • 8 ounces ham
  • 2 tablespoons oil
  • 1 tablespoon green onion

Custard

  • 8 large eggs
  • 2 cups heavy cream
  • ½ cup milk or water
  • 1 zest lemon
  • ½ teaspoon pepper
  • 1 pinch ground nutmeg
  • 8 ounces Gouda cheese

Instructions

  1. Mix the dry ingredients for the crust in a bowl and blend the eggs separately before combining them.
  2. Refrigerate the crust dough until needed.
  3. Slice the fennel and onion, then sauté them in oil until soft, adding water to simmer.
  4. Chop the ham and prepare the springform pan with parchment.
  5. Roll out the crust and fit it into the pan, then refrigerate again.
  6. Brown the ham in oil and mix with the cooked vegetables.
  7. Preheat the oven to 350°F and prepare the custard mixture with eggs, cream, milk, lemon zest, pepper, nutmeg, and cheese.
  8. Pour the custard over the ham and vegetables in the pan and sprinkle with reserved cheese.
  9. Bake for about an hour until set, then cool before removing from the pan.
