Instructions
- Mix the dry ingredients for the Thyme Crust in a bowl and blend the eggs separately before combining them to form a dough. Refrigerate the dough.
- Slice the fennel and onion, then sauté them in oil until soft, adding water to simmer. Chop the ham while the vegetables cook.
- Prepare the spring-form pan with parchment paper and roll out the dough to fit the base and sides of the pan. Refrigerate the crust.
- Once the fennel and onions are soft, brown the ham in oil and combine with the vegetables. Let cool slightly.
- Preheat the oven to 350°F. In a bowl, mix the cooled ham and vegetables with the custard ingredients, adding cheese last.
- Pour the mixture into the prepared spring-form pan, sprinkle with reserved cheese, and bake until set and golden.
- Cool the quiche for at least 30 minutes before removing it from the pan.
