Ingredients

Low Carb Thyme Crust

  • 2 cups almond flour
  • 2 large eggs
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon dried thyme

Quiche Filling

  • 4 ounces onion
  • 4 ounces fennel bulb or more onion
  • 8 ounces ham
  • 2 tablespoons oil
  • 1 tablespoon green onion

Custard

  • 8 large eggs
  • 2 cups heavy cream
  • ½ cup milk or water
  • 1 zest lemon
  • ½ teaspoon pepper
  • 1 pinch ground nutmeg
  • 8 ounces Gouda cheese

Instructions

  1. Mix the dry ingredients for the Thyme Crust in a bowl and blend the eggs separately before combining them to form a dough. Refrigerate the dough.
  2. Slice the fennel and onion, then sauté them in oil until soft, adding water to simmer. Chop the ham while the vegetables cook.
  3. Prepare the spring-form pan with parchment paper and roll out the dough to fit the base and sides of the pan. Refrigerate the crust.
  4. Once the fennel and onions are soft, brown the ham in oil and combine with the vegetables. Let cool slightly.
  5. Preheat the oven to 350°F. In a bowl, mix the cooled ham and vegetables with the custard ingredients, adding cheese last.
  6. Pour the mixture into the prepared spring-form pan, sprinkle with reserved cheese, and bake until set and golden.
  7. Cool the quiche for at least 30 minutes before removing it from the pan.
