Ingredients

The beef

  • 1 3-4 lb Beef Chuck Roast

The spices

  • 1 Tbsp Oregano
  • 1 Tbsp Cumin
  • ½ tsp Cloves, ground
  • ¼ tsp Cinnamon
  • 2 tsp Kosher Salt
  • ½ tsp Pepper
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Brown Sugar

The additional ingredients

  • 1 7 oz can Diced Green Chiles, mild
  • 2-3 Chipotles in Adobo, chopped
  • 2-3 Tbsp Adobo Sauce
  • 1 Yellow Onion, diced
  • 5 cloves Garlic, minced
  • 3 Bay Leaves

The liquids

  • 3 Tbsp Apple Cider Vinegar
  • 2-3 Tbsp Lime Juice, fresh
  • 1 cup Beer or beef broth

The garnishes

  • Diced Onion
  • Cilantro
  • Avocado
  • Sour Cream

Instructions

  1. Prepare all ingredients by cutting the meat, dicing the onion, and mincing the garlic.
  2. Add the meat to the slow cooker and sprinkle the mixed spices over it, mixing well.
  3. Add the remaining ingredients and stir to combine.
  4. Cook on Low for 8 hours or High for 4 hours until the meat is tender.
  5. Skim off some fat before removing the meat from the cooker.
  6. Shred the meat using two forks and return it to the slow cooker, stirring well.
  7. Serve with warm tortillas and desired toppings.
