Instructions
- Cut the chuck roast into 6 portions, removing any large pieces of fat.
- Heat 1 Tbsp of vegetable oil in a skillet and sear the seasoned beef until browned on all sides, then transfer to a slow cooker.
- Repeat the searing process with the remaining beef portions.
- In a food processor, blend chipotle chilies, garlic, and 1/4 cup of beef broth until pureed.
- In a bowl, whisk together the remaining beef broth with the chipotle mixture, cumin, oregano, and cloves.
- Pour the mixture over the beef in the slow cooker and add bay leaves.
- Cover and cook on low heat for 8 to 9 hours.
- Remove the beef from the slow cooker and shred it.
- Stir the lime juice into the broth in the slow cooker, return the beef, and cook on low or warm for an additional 20 to 30 minutes.
