Beef brisket or chuck roast (trimmed and cut into 2 inch chunks)

Instructions
- Blend the sauce ingredients until smooth.
- Place the beef chunks in the slow cooker and pour the sauce over them.
- Add the bay leaves on top.
- Cook on high for 4-6 hours or low for 8-10 hours until the beef is tender.
- Remove the bay leaves and shred the beef with forks, mixing it back into the juices.
- Let it rest for 5-10 minutes before serving.
