Vasilopita (Greek New Year's Cake)

Ingredients

The cake

  • 2 ½ tsp baking powder
  • 2 ½ cups all-purpose flour
  • ¾ tsp salt
  • 3 large eggs
  • 1 ½ cups sugar
  • ¾ cup extra-virgin olive oil
  • ½ cup fresh squeezed orange juice
  • 2 tbsp fresh squeezed orange juice
  • ½ cup whole milk
  • zest from one orange
  • 2 tbsp vanilla extract
  • 1 coin wrapped in tinfoil

For topping

  • ½ cup icing sugar
  • ½ cup pomegranate seeds

Instructions

  1. Preheat the oven to 350°F and grease a 10-inch springform pan with butter, lining the bottom with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the eggs and sugar with a hand mixer until creamy and pale, about 1-2 minutes.
  4. Add the olive oil, ½ cup + 2 tbsp orange juice, whole milk, orange zest, and vanilla extract to the egg mixture and mix on low speed until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix on low speed until well combined.
  6. Pour the batter into the prepared cake pan and gently add the foil-wrapped coin, smoothing the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 15 minutes, then remove it to cool completely.
  9. Once cooled, sprinkle icing sugar over the top and use pomegranate seeds to create the new year number.
