Vasilopita (Greek New Year's Cake)

Instructions
- Preheat the oven to 350°F and grease a 10-inch springform pan with butter, lining the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, beat the eggs and sugar with a hand mixer until creamy and pale, about 1-2 minutes.
- Add the olive oil, ½ cup + 2 tbsp orange juice, whole milk, orange zest, and vanilla extract to the egg mixture and mix on low speed until combined.
- Gradually add the dry ingredients to the wet ingredients and mix on low speed until well combined.
- Pour the batter into the prepared cake pan and gently add the foil-wrapped coin, smoothing the top.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 15 minutes, then remove it to cool completely.
- Once cooled, sprinkle icing sugar over the top and use pomegranate seeds to create the new year number.
