Ingredients

The base

  • ½ cup brown rice
  • splash rice wine vinegar (optional)

The sauce

  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons ponzu sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon black sesame seeds or toasted sesame seeds
  • 1 green onion sliced

The toppings

  • ½ round sushi-grade ahi tuna
  • ½ avocado cubed
  • ½ serrano pepper thinly sliced

Instructions

  1. Cook the brown rice according to your rice maker's instructions or stovetop with a 1:1 ratio of rice to water, optionally adding rice wine vinegar and salt.
  2. In a bowl, whisk together the soy sauce, ponzu sauce, sesame oil, sesame seeds, and green onion. Adjust seasoning to taste.
  3. Dice the tuna into bite-sized pieces and mix with the sauce, allowing it to marinate for 5 minutes.
  4. Add the cubed avocado to the tuna and gently toss.
  5. Serve the warm rice in a bowl, topped with the marinated tuna and avocado mixture, garnished with sliced serrano pepper and extra sesame seeds.
