Ingredients

The cake balls

  • 16.5 oz yellow cake mix
  • 6 oz plain fat-free Greek yogurt
  • 1 cup water
  • 2 large egg whites
  • 1 can baking spray

The coating

  • 48 oz Baker's white chocolate
  • to taste mini chocolate chips for the eyes
  • 1 piece wooden skewer

Instructions

  1. Preheat the oven to 350°F and spray the cake pop pan with baking spray.
  2. In a large bowl, combine the cake mix, yogurt, water, and egg whites, then beat until smooth.
  3. Transfer the batter to a pastry bag or a ziplock bag with the tip cut off and pipe into the cake pop pan.
  4. Bake for about 18 minutes, rotating the pan after 10 minutes for even baking. Let rest for 5 minutes before opening the pan.
  5. Place the cake balls on a wire rack and repeat with the remaining batter. Cut the seams off the balls with scissors.
  6. Refrigerate the cake balls for about 45 minutes to help the chocolate stick.
  7. Melt some of the chocolate in the microwave, adding oil if it's too thick.
  8. Insert a wooden skewer into each cake ball, dip in the melted chocolate, and let excess drip off.
  9. Place each dipped ball on parchment paper, then drizzle remaining chocolate on top to create a criss-cross effect.
  10. Add mini chocolate chips for eyes and set aside to dry.
