Ingredients

The cake

  • 2 cups almond flour
  • ¼ cup arrowroot powder (or tapioca starch)
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • cup melted coconut oil
  • ½ cup maple syrup
  • 1 tbsp vanilla extract
  • 1 tsp lemon juice
  • block cream cheese, softened

The coating

  • 1 cup white chocolate, divided
  • as needed none food coloring
  • as needed none sprinkles
  • as needed none cake pop sticks

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 pan with nonstick spray.
  2. In a large bowl, mix almond flour, arrowroot powder, baking soda, and salt.
  3. In a smaller bowl, whisk together eggs, melted coconut oil, maple syrup, vanilla, and lemon juice.
  4. Combine wet and dry ingredients, then pour the batter into the prepared pan.
  5. Bake for 22-24 minutes until lightly golden, then let cool for 5 minutes.
  6. Scoop out the soft insides of the cake, leaving the hard edges, and place in a bowl.
  7. Mix the cake crumbs with softened cream cheese using your hands.
  8. Roll the mixture into balls and place on a parchment-lined baking rack.
  9. Melt the white chocolate in the microwave in increments until smooth.
  10. Dip the end of the cake pop stick into melted chocolate, then insert into each cake ball.
  11. Freeze the cake pops for 20 minutes to set.
  12. Melt the remaining chocolate, add food coloring if desired, and coat the cake pops.
  13. Dip in sprinkles if desired and place on a cooling rack.
  14. Refrigerate for at least 10 minutes before serving.
