Instructions
- Preheat the oven to 350°F and prepare an 8x8 pan with nonstick spray.
- In a large bowl, mix almond flour, arrowroot powder, baking soda, and salt.
- In a smaller bowl, whisk together eggs, melted coconut oil, maple syrup, vanilla, and lemon juice.
- Combine wet and dry ingredients, then pour the batter into the prepared pan.
- Bake for 22-24 minutes until lightly golden, then let cool for 5 minutes.
- Scoop out the soft insides of the cake, leaving the hard edges, and place in a bowl.
- Mix the cake crumbs with softened cream cheese using your hands.
- Roll the mixture into balls and place on a parchment-lined baking rack.
- Melt the white chocolate in the microwave in increments until smooth.
- Dip the end of the cake pop stick into melted chocolate, then insert into each cake ball.
- Freeze the cake pops for 20 minutes to set.
- Melt the remaining chocolate, add food coloring if desired, and coat the cake pops.
- Dip in sprinkles if desired and place on a cooling rack.
- Refrigerate for at least 10 minutes before serving.
