The chocolate coating

Instructions
- Mix all the ingredients for the protein balls in a medium bowl until combined.
- Knead the dough with your hands until it becomes malleable; add water if needed.
- Roll the mixture into balls using a cookie scoop and freeze them on a parchment-lined plate.
- Prepare the ganache by melting chocolate chips in the microwave and mixing in warmed heavy cream.
- Dip the frozen balls into the chocolate ganache and place them on a metal rack.
- Sprinkle with additional sprinkles and flaked salt, then freeze again for at least 30 minutes.
- Insert lollipop sticks into the cake pops and serve immediately or store in the freezer.
