Ingredients

The protein balls

  • 1 cup all-natural drippy cashew butter
  • cup vanilla protein powder
  • ½ cup quick-cooking oats
  • 2 tablespoons honey
  • 2 tablespoons rainbow sprinkles
  • 2 teaspoons vanilla extract
  • 2 teaspoons water

The chocolate coating

  • 1 cup semi-sweet chocolate chips
  • ¼ cup heavy cream

Toppings

  • to taste sprinkles
  • to taste flaked salt

Instructions

  1. Mix all the ingredients for the protein balls in a medium bowl until combined.
  2. Knead the dough with your hands until it becomes malleable; add water if needed.
  3. Roll the mixture into balls using a cookie scoop and freeze them on a parchment-lined plate.
  4. Prepare the ganache by melting chocolate chips in the microwave and mixing in warmed heavy cream.
  5. Dip the frozen balls into the chocolate ganache and place them on a metal rack.
  6. Sprinkle with additional sprinkles and flaked salt, then freeze again for at least 30 minutes.
  7. Insert lollipop sticks into the cake pops and serve immediately or store in the freezer.
