Toasted Oatmeal

  • 1 to 2 tablespoons coconut oil or butter
  • 2 cups rolled oats
  • 1 ½ cups water
  • ½ cup milk of choice
  • 1 pinch kosher or sea salt
  • 1 pinch ground cinnamon (optional)
  • 1 pinch ground ginger (optional)
  • to taste various optional mix-ins (flax seeds, shredded coconut, toasted nuts, etc.)

Coconut Whipped Cream

  • 1 can full fat coconut milk (14 ounces)
  • 1 tablespoon honey, maple syrup or agave nectar
  • ½ teaspoon vanilla extract

Instructions

  1. Start by making the strawberry chia jam: Combine frozen berries and sweetener in a saucepan, bring to a simmer, and mash the berries lightly.
  2. Reduce heat and stir in chia seeds, cooking until the jam thickens.
  3. For the oatmeal, melt coconut oil or butter in a skillet and toast the oats until fragrant.
  4. In a pot, combine milk, water, salt, and spices, bring to a boil, then add the toasted oats and cover, letting them sit off heat to absorb the liquid.
  5. Prepare the coconut whipped cream by chilling coconut milk, then mixing the solid cream with sweetener and vanilla until fluffy.
