Peachy Green Quesadilla

Ingredients

The quesadilla

  • 4 whole whole wheat tortillas
  • ½ cup Cabot Chipotle Cheddar cheese, grated
  • 1 cup arugula or other leafy greens

The peaches

  • 2 small ripe peaches, cut in half and pits removed

Cooking spray

  • 1 spray Non-stick cooking spray

Instructions

  1. Preheat the grill, panini press, or non-stick skillet over medium-high heat.
  2. Lightly spray the cut side of each peach half with cooking spray and place on the grill, face-side down.
  3. Cook for 5-10 minutes until the peaches are tender and have grill marks, then remove from heat.
  4. Cut the grilled peach halves into 4-6 thin slices.
  5. To assemble the quesadilla, lightly spray one tortilla with cooking spray and place it on the skillet.
  6. Top with half of the cheese, arugula, and peach slices, then place another tortilla on top.
  7. Cook for 4-5 minutes, flipping halfway through, until the cheese is melted.
  8. Repeat with the remaining ingredients for the second quesadilla.
  9. Slice into fourths and enjoy.
