Instructions
- Preheat the grill to medium heat and lightly spray one side of each tortilla with cooking spray.
- Spread pesto evenly on the unsprayed side of each tortilla, then add peaches and mozzarella cheese.
- Top each with the remaining tortilla, sprayed side up, and press together.
- Place quesadillas directly on the hot grill and cook for 6-8 minutes, flipping carefully once until the cheese is melted.
- Remove from the grill, cut the quesadillas into quarters, and serve immediately.
