Ingredients

Dry Ingredients

  • 2 cups Almond flour
  • ½ cup Oat fiber
  • ½ cup Low Carb Brown Sugar
  • 2 teaspoons Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Xanthan gum
  • ½ teaspoon Ground cardamom
  • ¼ teaspoon Allspice
  • ¼ teaspoon Ground ginger
  • ¼ teaspoon Salt

Wet Ingredients

  • 4 large Eggs
  • cup Coconut milk (full fat)
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Stevia glycerite
  • ¾ large Granny Smith apple (peeled, cored, and grated)

Crumb Topping

  • cup Dry ingredients
  • 1 tablespoon Granulated erythritol
  • 1 tablespoon Melted butter (ghee or coconut oil)

Instructions

  1. Gather all ingredients.
  2. Preheat the oven to 325°F and line a muffin tin with baking papers.
  3. Peel, core, and grate the Granny Smith apple.
  4. Mix all dry ingredients in a medium bowl and reserve ⅓ cup for the crumb topping.
  5. In a large bowl, blend the wet ingredients and grated apple using a hand mixer.
  6. Combine the dry ingredients with the wet ingredients and let sit for 5 minutes.
  7. Scoop the batter into muffin liners, filling them ¾ full.
  8. Mix the reserved dry ingredients with sweetener and melted butter to form the crumb topping.
  9. Sprinkle the crumb topping over the muffin batter.
  10. Bake for 15 minutes at 325°F, then increase the heat to 350°F and bake for an additional 10-15 minutes until a toothpick comes out clean.
