Instructions
- Gather all ingredients.
- Preheat the oven to 325°F and line a muffin tin with baking papers.
- Peel, core, and grate the Granny Smith apple.
- Mix all dry ingredients in a medium bowl and reserve ⅓ cup for the crumb topping.
- In a large bowl, blend the wet ingredients and grated apple using a hand mixer.
- Combine the dry ingredients with the wet ingredients and let sit for 5 minutes.
- Scoop the batter into muffin liners, filling them ¾ full.
- Mix the reserved dry ingredients with sweetener and melted butter to form the crumb topping.
- Sprinkle the crumb topping over the muffin batter.
- Bake for 15 minutes at 325°F, then increase the heat to 350°F and bake for an additional 10-15 minutes until a toothpick comes out clean.
