Ingredients

Dry Ingredients

  • 2 cups Almond flour
  • ½ cup Oat fiber
  • ½ cup Low Carb Brown Sugar
  • 2 teaspoons Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Xanthan gum
  • ½ teaspoon Ground cardamom
  • ¼ teaspoon Allspice
  • ¼ teaspoon Ground ginger
  • ¼ teaspoon Salt

Wet Ingredients

  • 4 large Eggs
  • cup Coconut milk (full fat)
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Stevia glycerite
  • ¾ large Granny Smith apple (peeled, cored, and grated)

Crumb Topping

  • cup Dry ingredients
  • 1 tablespoon Granulated erythritol
  • 1 tablespoon Melted butter (ghee or coconut oil)

Instructions

  1. Gather all ingredients.
  2. Preheat oven to 325°F and line a muffin tin with liners.
  3. Peel, core, and grate the Granny Smith apple.
  4. Mix all dry ingredients in a medium bowl and set aside ⅓ cup for the crumb topping.
  5. In a large bowl, blend wet ingredients and grated apple with a hand mixer.
  6. Combine dry ingredients with wet ingredients until incorporated and let sit for 5 minutes.
  7. Scoop batter into muffin liners, filling them ¾ full.
  8. Mix sweetener into reserved dry mixture and combine with melted butter until clumping.
  9. Sprinkle crumb mixture over muffin batter.
  10. Bake for 15 minutes at 325°F, then increase heat to 350°F and bake for another 10-15 minutes until a toothpick comes out clean.
