Ingredients

The salad

  • 4 hard-boiled eggs, peeled

  • ½ teaspoon minced garlic
  • ½ lime juice
  • to taste green Tabasco sauce
  • to taste salt
  • to taste pepper

The bread

  • 4 slices whole-grain bread

Desired toppings

  • to taste baby spinach leaves
  • to taste sliced baby cucumbers
  • to taste sliced red onions
  • to taste alfalfa sprouts
  • to taste crisp bacon slices
  • to taste sliced tomatoes

Instructions

  1. Chop the hard-boiled eggs and place them in a mixing bowl.
  2. Add the mashed avocado and 1 tablespoon of mayonnaise, then mix until combined.
  3. Incorporate the green onions, garlic, lime juice, green Tabasco sauce, salt, and pepper.
  4. Taste and add more mayonnaise if needed.
  5. If desired, toast the bread.
  6. Layer baby spinach leaves on the toasted bread, add the egg salad mixture, and top with desired toppings.
  7. Serve immediately.
