Instructions
- Chop the hard-boiled eggs and place them in a mixing bowl.
- Add the mashed avocado and 1 tablespoon of mayonnaise, then mix until combined.
- Incorporate the green onions, garlic, lime juice, green Tabasco sauce, salt, and pepper.
- Taste and add more mayonnaise if needed.
- If desired, toast the bread.
- Layer baby spinach leaves on the toasted bread, add the egg salad mixture, and top with desired toppings.
- Serve immediately.
