Taco Cups with Beef and Cheese

Instructions
- Preheat the oven to 400°F.
- Heat olive oil in a large pan over medium-high heat.
- Add ground beef, breaking it up with a spatula, and cook until browned.
- Stir in taco seasoning and salt, then add drained diced tomatoes and mix well.
- Coat a muffin tin with cooking spray and place a wonton wrapper in each cup.
- Spoon about 1 tablespoon of the meat mixture into each cup and top with 2 teaspoons of cheese.
- Add a second layer of wonton, followed by the remaining meat and cheese.
- Bake for 10-15 minutes until edges are browned and cheese is melted.
- Top with sour cream, green onions, and tomatoes before serving.
