Taco Cups with Beef and Cheese

Ingredients

The filling

  • 2 teaspoons olive oil
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 14 ounce can petite diced tomatoes

The assembly

  • 24 pieces wonton wrappers
  • 1 ¼ cups shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup sliced green onions
  • ¼ cup diced fresh tomatoes
  • to taste salt
  • as needed cooking spray

Instructions

  1. Preheat the oven to 400°F.
  2. Heat olive oil in a large pan over medium-high heat.
  3. Add ground beef, breaking it up with a spatula, and cook until browned.
  4. Stir in taco seasoning and salt, then add drained diced tomatoes and mix well.
  5. Coat a muffin tin with cooking spray and place a wonton wrapper in each cup.
  6. Spoon about 1 tablespoon of the meat mixture into each cup and top with 2 teaspoons of cheese.
  7. Add a second layer of wonton, followed by the remaining meat and cheese.
  8. Bake for 10-15 minutes until edges are browned and cheese is melted.
  9. Top with sour cream, green onions, and tomatoes before serving.
