Instructions
- Combine honey, yeast, and warm water in a small bowl and let it sit until foamy.
- In a large bowl, mix 2 cups of flour with salt, then add the foamy yeast mixture and stir.
- Gradually add flour, ½ cup at a time, until the dough is too hard to stir.
- Knead the dough on a floured surface for about 8 minutes, adding flour until it's stiff but pliable.
- Flatten the dough, add cinnamon and raisins, fold over, and knead until evenly mixed.
- Cover the dough and let it rise until doubled in size (about 45 minutes).
- Punch down the dough, shape it into a log, and cut it into 10 pieces.
- Form each piece into a ball and create a hole in the center, stretching it to be larger than it seems.
- Place bagels on a baking sheet and let them rise until doubled (about 45 minutes).
- Broil bagels briefly on each side, then boil them for 1 minute on each side.
- Drain the bagels and bake at 375°F for about 30 minutes or until golden brown.
