Ingredients

The dough

  • 1 Tbsp honey or sugar
  • tsp yeast
  • 2 tsp cinnamon

  1. Combine honey, yeast, and warm water in a small bowl and let it sit until foamy.
  2. In a large bowl, mix 2 cups of flour with salt, then add the foamy yeast mixture and stir.
  3. Gradually add flour, ½ cup at a time, until the dough is too hard to stir.
  4. Knead the dough on a floured surface for about 8 minutes, adding flour until it's stiff but pliable.
  5. Flatten the dough, add cinnamon and raisins, fold over, and knead until evenly mixed.
  6. Cover the dough and let it rise until doubled in size (about 45 minutes).
  7. Punch down the dough, shape it into a log, and cut it into 10 pieces.
  8. Form each piece into a ball and create a hole in the center, stretching it to be larger than it seems.
  9. Place bagels on a baking sheet and let them rise until doubled (about 45 minutes).
  10. Broil bagels briefly on each side, then boil them for 1 minute on each side.
  11. Drain the bagels and bake at 375°F for about 30 minutes or until golden brown.
