Ingredients

The dough

  • cups warm water
  • teaspoons instant or active dry yeast
  • 4 cups bread flour
  • 1 Tablespoon packed light or dark brown sugar
  • 2 teaspoons salt
  • 1 teaspoon pure vanilla extract
  • ¾ cup raisins
  • 3 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 Tablespoon olive oil or nonstick spray for coating

Water bath

  • 2 quarts water
  • ¼ cup honey

Egg wash

  • 1 egg white beaten with water

Instructions

  1. Whisk warm water and yeast in a stand mixer bowl and let sit for 5 minutes.
  2. Add flour, brown sugar, salt, and vanilla extract, then beat on low speed and mix in raisins.
  3. Sprinkle sugar and cinnamon on a clean surface, place dough on top, and knead for 5 minutes.
  4. Grease a large bowl, place dough inside, cover, and let rise for 60-90 minutes until doubled.
  5. Preheat oven to 425°F (218°C) and line baking sheets with parchment paper.
  6. Punch down the dough, divide into 8 pieces, and shape each into a ball with a hole in the center.
  7. Prepare a water bath by boiling water with honey, then boil bagels for 1 minute on each side.
  8. Brush bagels with egg wash and place on baking sheets.
  9. Bake for 20-25 minutes until golden brown, then cool on a wire rack.
