Homemade Cinnamon Raisin Bagels

Instructions
- Whisk warm water and yeast in a stand mixer bowl and let sit for 5 minutes.
- Add flour, brown sugar, salt, and vanilla extract, then beat on low speed and mix in raisins.
- Sprinkle sugar and cinnamon on a clean surface, place dough on top, and knead for 5 minutes.
- Grease a large bowl, place dough inside, cover, and let rise for 60-90 minutes until doubled.
- Preheat oven to 425°F (218°C) and line baking sheets with parchment paper.
- Punch down the dough, divide into 8 pieces, and shape each into a ball with a hole in the center.
- Prepare a water bath by boiling water with honey, then boil bagels for 1 minute on each side.
- Brush bagels with egg wash and place on baking sheets.
- Bake for 20-25 minutes until golden brown, then cool on a wire rack.
