Ingredients

The dough

  • cups warm water
  • teaspoons instant or active dry yeast
  • 4 cups bread flour
  • 1 Tablespoon granulated sugar or brown sugar
  • 2 teaspoons salt
  • nonstick spray or 2 teaspoons olive oil
  • 1 egg white beaten with water for egg wash

For boiling

  • 2 quarts water
  • ¼ cup honey or barley malt syrup

Instructions

  1. Whisk warm water and yeast in a bowl and let sit for 5 minutes.
  2. Add flour, brown sugar, and salt, then mix on low speed for 2 minutes.
  3. Knead the dough for 6-7 minutes until it is stiff but slightly tacky.
  4. Grease a bowl and place the dough inside, covering it to rise for 60-90 minutes.
  5. Line baking sheets with parchment paper.
  6. Punch down the dough and divide it into 8 pieces, shaping each into a ball with a hole in the center.
  7. Preheat the oven to 425°F (218°C).
  8. Boil water with honey, then cook bagels for 1 minute on each side.
  9. Brush bagels with egg wash and place them on the baking sheets.
  10. Bake for 20-25 minutes until golden brown, then cool on a wire rack.
