Homemade Everything Bagels

The water bath

coarse sea salt or flaky sea salt

beaten with water
Instructions
- Whisk warm water and yeast in a bowl and let sit for 5 minutes.
- Add flour, brown sugar, and salt, and mix on low speed for 2 minutes.
- Knead the dough for 6-7 minutes until it's stiff and slightly tacky.
- Grease a bowl, place the dough inside, cover, and let rise until doubled in size (60-90 minutes).
- Preheat the oven to 425°F (218°C) and line baking sheets with parchment.
- Punch down the dough, divide into 8 pieces, and shape each into a ball with a hole in the center.
- Prepare the water bath with boiling water and honey, then boil bagels for 1 minute on each side.
- Brush bagels with egg wash and coat with everything bagel seasoning.
- Bake for 20-25 minutes until golden brown, then cool on a wire rack.
