Ingredients

The dough

  • cups warm water
  • teaspoons instant or active dry yeast
  • 4 cups bread flour
  • 1 tablespoon packed light or dark brown sugar
  • 2 teaspoons salt
  • 1 tablespoon nonstick spray or olive oil

The water bath

  • 2 quarts water
  • ¼ cup honey

The topping

  • 2 tablespoons poppy seeds
  • 2 tablespoons sesame seeds
  • 1 tablespoon dried minced onion
  • 1 tablespoon dried garlic flakes
  • 1 tablespoon coarse sea salt or flaky sea salt
  • 1 egg white beaten with water

Instructions

  1. Whisk warm water and yeast in a bowl and let sit for 5 minutes.
  2. Add flour, brown sugar, and salt, and mix on low speed for 2 minutes.
  3. Knead the dough for 6-7 minutes until it's stiff and slightly tacky.
  4. Grease a bowl, place the dough inside, cover, and let rise until doubled in size (60-90 minutes).
  5. Preheat the oven to 425°F (218°C) and line baking sheets with parchment.
  6. Punch down the dough, divide into 8 pieces, and shape each into a ball with a hole in the center.
  7. Prepare the water bath with boiling water and honey, then boil bagels for 1 minute on each side.
  8. Brush bagels with egg wash and coat with everything bagel seasoning.
  9. Bake for 20-25 minutes until golden brown, then cool on a wire rack.
