Ingredients

The dough

  • 1 packet active dry yeast
  • cups warm water
  • 4 cups bread flour
  • 3 tablespoons barley malt syrup
  • 4 teaspoons granulated sugar
  • 2 teaspoons salt
  • 1 tablespoon olive oil

Toppings

  • to taste Everything Bagel Seasoning or poppy seeds, sesame seeds, or coarse salt

Instructions

  1. Bloom the yeast in warm water for about 5 minutes.
  2. In an electric mixer, combine flour, 2 tablespoons of barley malt syrup, sugar, and salt.
  3. Drizzle in the yeast mixture while mixing on low speed, then increase to medium and mix until smooth for 6 to 10 minutes.
  4. Shape the dough into a ball, place in a greased bowl, brush with olive oil, cover, and let rise in a warm place for about 20 minutes.
  5. Divide the dough into 12 portions and roll each into a 9-inch rope, forming a circle with a quarter-sized hole in the center.
  6. Cover the bagels with a damp towel and let rise for another 10 minutes.
  7. Prepare a simmering water bath with the remaining barley malt syrup.
  8. Boil the bagels in batches for 30 seconds on each side, then transfer to a cooling rack.
  9. Preheat the oven to 425 degrees and sprinkle toppings on the damp bagels.
  10. Bake the bagels for 20 to 25 minutes until golden brown, rotating halfway through.
  11. Let cool for at least 30 minutes before serving.
