Ingredients

Dough

  • 4 cups bread flour
  • 1 tablespoon instant yeast
  • 2 teaspoons kosher salt
  • 1 tablespoon brown sugar
  • 1 ⅓ cups warm water (about 105°F)

Water bath

  • 2 quarts water
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar

Instructions

  1. Combine flour, yeast, brown sugar, and salt in a mixing bowl.
  2. Add warm water and mix to combine, then knead the dough for 10 minutes with a mixer or 15 minutes by hand.
  3. Transfer the kneaded dough to a lightly oiled bowl, cover, and let it rise for 60-90 minutes.
  4. Once risen, line a baking sheet with parchment paper and set aside.
  5. Cut the dough into 8 equal pieces and shape into balls, resting for 30 minutes.
  6. Preheat the oven to 425°F and bring the water bath ingredients to a boil.
  7. Poke a hole in the center of each dough ball and twirl to widen the hole.
  8. Boil 4 bagels at a time for 2 minutes on one side and 1 minute on the other, then transfer to the baking sheet.
  9. Optionally sprinkle with toppings and bake for 20-25 minutes until golden brown.
